Expansion Begins at Nelson’s Catering and Fundraising
According to DJ Construction’s Pre-Construction Project Manager Pat Gross, the entire kitchen operation will be moved into the new space in order to serve the company’s growing catering needs. Currently, services are dispersed throughout the campus, a result of Nelson’s growth throughout their 48 years of business.
Gross said the project will enable the company to consolidate and operate from a single location. The space includes preparation and cooking areas, dishwashing and holding space, and van loading space. DJ also plans on expanding cooler space as well.
Tad Nelson Gongwer, third-generation owner of the company, said the enhancements will “streamline production, increase volumes of cold storage, and improve overall efficiencies within the entire Nelson’s™ organization.
“These improvements will increase our cooking capacity as well as the food prep and working areas by nearly four times. The freezer space alone will hold roughly 100 pallets of product.”
Gross said the project also includes a charcoal cooking patio with space for five cook trailers. Cooks who prepare the food can immediately transfer the items onto the trailers, saving valuable time in the loading and transporting process.
The project will be completed this summer.
